FRESH Ideas for Picky Eaters

In my family there are a few people who sometimes need convincing to eat their vegetables and aren't happy when ground turkey or chicken is substituted for ground beef or pork.

I found a way to sneak some extra vegetables into their meal and trick them into thinking their meatballs are really meatballs and not ground turkeyballs.

They will never know the difference.


Turkey Meatball Bake with Sneaky Veggie Marinara
INGREDIENTS

Sneaky Marinara Sauce
2 tablespoons olive oil
1/2 cup carrots, grated
1/4 cup mushrooms, chopped
1/2 cup cauliflower florets, minced
1/2 cup frozen spinach, thawed and squeezed
1/2 cup zucchini, peeled and grated
1 cup beets, boiled, peeled and mashed
1/2 cup water
3 jars low-sodium prepared marinara
salt & pepper, to taste
2 tablespoons fresh basil, chopped

DIRECTIONS

In a medium saucepan over medium heat add the olive oil. Add carrots, cauliflower, zucchini and mushrooms and slowly sauté for about 10 minutes. Add 1/2 cup water and continue to cook until all ingredients are softened but not browned. Add spinach and beets. Stir to combine. Add marinara. Continue stirring to incorporate all of the vegetables. Bring to a simmer and let cook for 10 to 15 minutes. Check for seasoning. Note: A tablespoon of hemp seed powder can be added for a boost of fiber and protein.

Turkey Meatball Bake
Your family will never know these meatballs are turkey instead of beef or pork. The addition of the marinara sauce and the taco seasoning in the meatball mixture disguises that recognizable flavor of ground turkey.

INGREDIENTS

1 pound lean ground turkey
3 cups sneaky marinara sauce, divided
1/4 cup grated parmesan cheese
1 egg
1/2 cup panko breadcrumbs
1 tablespoon taco seasoning
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup part-skim grated mozzarella cheese

DIRECTIONS

In a mixing bowl combine the turkey, 1 cup marinara, parmesan cheese, egg, breadcrumbs, taco seasoning, salt and pepper. In a baking dish add 1 cup marinara to the bottom of the dish. Make the meatballs and place them in an even layer in the dish. Top the meatballs with the remaining cup of marinara and sprinkle with the mozzarella. Bake at 375 for 20 to 30 minutes until cooked through. Serve with pasta.
