Fit City Challenge

Fit City One Bite, Feb. 1

TRICKY DIX VEGGIE SKEWERS
INGREDIENT
1 red bell pepper
1 yellow bell pepper
1 red onion
1 yellow squash, peeled
1 zucchini, peeled
8 ounces crimini mushrooms
8 ounces cherry tomatoes
1/4 cup olive oil
1 tablespoon Tricky Dix seasoning
6-inch wooden skewers

DIRECTIONS
Soak the skewers in water for 20 minutes. Cut the bell peppers and onion into 1 inch pieces. Cut the zucchini and squash into fourths lengthwise. Dice into one inch chunks. Clean the mushrooms with a damp paper towel. Place all of the vegetables in a large bowl. Toss with the olive oil and seasoning. Thread a variety of vegetables onto each skewer. Heat a grill or grill pan to high heat. Spray with nonstick cooking spray. Grill on each side until charred. Serve with your favorite salad dressing.
