Mother's Day Idea: Brunch With Mommy
From Staff Reports

Putting together a Mother's Day breakfast or brunch should be something fun, easy and not too taxing for the supervising adult or the children, who should be involved in some way.

For little ones, the old adage of "to give is better than to receive" still means a lot, and they take it to heart when it comes to parents and other immediate family members.

To get started, come up with a menu appropriate for the time of day. Mom will need energy for all the fun you've planned for the day, so think of proteins and fibers that will make her feel good, but also taste good, too. Don't forget to clean up the mess!

Mother's Day Menu

To Drink:

4 A glass of juice, a cup of coffee or a cup of tea always will work.

To put a spin on it, create a Creamy Orange Citrus Breeze

  • 1 1/2 quart orange juice

  • 1 pkg. JELL-O Vanilla Flavor Fat Free Sugar Free Instant Pudding Pie Filling

  • 1 1/2 cups whipped topping

Pour 3 cups of the orange juice into a large bowl. Add dry pudding mix. Beat with wire whisk for two minutes. Gently stir in whipped topping. Add remaining 3 cups of juice; mix until well blended.

  • Serve immediately or refrigerate until ready to serve in six glasses. Garnish with orange slices if desired.

    Fruit Serving:

4 A plate of fresh apple, orange and pineapple slices with strawberries is a bright way to begin.

To put a spin on it, try a Very "Bear"-y Parfait

  • 1 1/4 cups Teddy Grahams

  • 1 1/4 cups fruit

  • 1 cup vanilla low-fat yogurt

Reserve 1/4 cup of Teddy Grahams and fruit for garnish.

  • Layer remaining graham snacks, remaining fruit and the yogurt in four 6 oz. parfait glasses (clear drinking glasses are OK, too). Top evenly with the reserved Teddy Grahams and fruit.

    Main Course:

4 Scrambled eggs and toast with jam are good choices.

To put a spin on it, try a quick breakfast taco.

  • 2 corn tortillas

  • 1 Tbsp. salsa

  • 2 Tbsp. shredded, reduced fat cheddar cheese

  • 1/2 cup liquid egg substitute, such as Egg Beaters

  • Kids can top tortillas with salsa and cheese. Heat in the microwave until the cheese is melted, about 30 seconds.

An adult is needed to coat a small, nonstick skillet with cooking spray and heat over medium heat.

Add egg and cook, stirring until cooked through, about 1 1/2 minutes. Divide the scrambled eggs between the tortillas.
