Mom’s Pecan Pie



3 eggs, beaten

3/4 cup sugar

1 cup of light corn syrup

2 tablespoons melted butter

1/4 teaspoon salt

2 teaspoons vanilla

1 cup chopped pecans

1 nine inch pie crust



Combine eggs, sugar, corn syrup, butter, salt and vanilla in a mixing bowl and beat lightly. Add pecans and pour into prepared crust. Bake for 45 to 60 minutes at 350 degrees. Time can vary depending on thickness of crust and the type of pie pan. Glass and ceramic pans often take longer to cook through. Keep an eye on the pie and cover crust with strips of foil if it begins to brown too much. Test for doneness by touching the top of the pie and checking for resistance. If it is still liquidy cook longer. If the center feels slightly firm then remove from the oven.
