Caramelized Onion Guinness Gravy



1 onion, halved and sliced

1 tablespoon cooking oil

1 bottle of Guinness

1/2 cup beef stock

1/2 cup cream

1 teaspoon Worcestershire

1 teaspoon grainy mustard

Salt & pepper



Add onion and oil to pan over low heat. Toss to coat and slowly sauté. After two minutes, when the onion is softened add 1/4 of the beer and sauté until absorbed, do this once more and continue to sauté until absorbed. Add remaining half of beer, stock and cream. Bring to a boil and reduce slightly to thicken. Remove from heat and add the Worcestershire, mustard, salt and pepper. Spoon over steaks, lamb chops or pork chops.
