This week on FRESH Ideas I was joined by Managing Editor, Brian Pearson. Together we prepared some of our favorite slow cooker recipes that we like to serve at game-watching or tailgate parties.
These two recipes definitely keep the party guests happy. People can’t get enough of my slow cooked shredded pork roast with great spicy Asian flavor or Brian’s White Queso with fresh pico de gallo and a hint of wine. The wine adds to the flavor, but is actually there to keep the cheese creamy and smooth from the beginning of the party to the end.
Kung Pao Spicy Pork Sandwiches
1 1/2 to 2 pound pork roast, excess fat or silverskin removed
1/3 cup rice wine vinegar
1/3 cup brown sugar
1/3 cup hoisin sauce
1/3 cup soy sauce
2 tablespoons sriracha (more or less, to taste)
2 teaspoons each fresh ginger & garlic, grated
Place the pork and all other ingredients in the slow cooker. Cook on high for four to six hours or until pork is tender enough to shred with two forks. Taste for seasoning. Add more sriracha to give the pork more spice. Serve on hamburger buns or thick white bread.

Brian’s White Queso
1 block of white Velveeta cheese (32 ounce size)
1 to 2 cups of fresh pico de gallo mix (available in produce section)
1/2 cup white wine
Place all ingredients in the slow cooker. Place on low and let melt for about an hour. Stir all ingredients together and continue to warm on low. The wine helps the cheese stay smooth over a long period of time.
