Shrimp Skewers with Grilled Peaches



2 pounds large shrimp, peeled and deveined

3 peaches, cored and sliced into wedges

8 pieces of prosciutto, sliced paper thin

2 lemons, juiced

2 tablespoons honey

1 tablespoon olive oil



Toss the peaches and the shrimp with the olive oil, honey, lemon juice and a pinch of salt. Tear the prosciutto into strips and wrap the prosciutto around the peaches. Alternately thread the shrimp and peaches onto the skewers. Heat grill to high and grill the skewers just until the shrimp is cooked through.  Serve the skewers with rice.
